Avial
This Avial recipe is a south Indian recipe which is from the southern state of Kerala. It is a vegetable side dish that is served generally with rice. It is also a special dish made on the occasion of Onam, a festival of Kerala. This is a semi-dry preparation which is a mixture of all sorts of vegetables.
Ingredients:
Yam [chena]: 150 gms
Ash gourd : 150 gms
Raw bananas : 2 nos
Drumsticks: 2 nos
Potato: 1 no
Shelled peas: 1/2 cup
Sour curds: 1 cup
Turmeric powder: 1/2 tsp
Curry leaves Few
Coconut oil: 1/4 cup
Salt To taste
PASTE : Coconut 1/2grated
Green chillies: 6-7 nos
Cumin seeds: 1 tsp
Recipe
1. Grind together the coconut, green chillies and cumin seeds to make a fine paste, adding very little water. Mix the curd to the ground paste and keep aside.
2. Peel and chop all the vegetables into 3-inch lengths.
3. Cook the vegetables separately with very little water in a heavy-bottomed vessel.
4. Mix all the cooked vegetables together with salt and turmeric powder.
5. Add the paste and heat through, taking care to prevent curdling.
6. Heat a pan add 1/4 cup coconut oil and fry curry leaves add this to the main course and mix well. Donot heat.
7. Serve hot with rice, poori, roti, aapam.
